Ingredients for four people:
  • 500 ml. broth
  • 120 ml. red wine
  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • 1 red onion
  • 360 gr. "vialone nano" rice
  • 120 gr. "Smoked Pippi" by Bechèr (practical bite-size salami without the skin)
  • parsley
  • Parmesan cheese at will
  • Preparation:
    Fry the onion in the oil and 2 tablespoons of butter, add the rice and make it lightly brown in the wine. Cook for around 18 minutes adding a little broth at a time. At the end, thicken with the "Smoked Pippi", butter, Parmesan cheese and parsley.
